Really simple veg bake No added fat and pretty low carb (depending on your veg).

-Your choice of veg- I've done this with only different coloured bell peppers, as well as a combo of 8 different veg.

-Mix with loads (a really generous amount) of dried herbs- again your choice, but I usually use a combo of rosemary, thyme, and paprika.

*optional- add in raw meat of choice and mix with the same seasoning you used on the veg.

-Place in a baking tray (no need to grease), cover with tin foil and bake at 180-200C.

-After the first 10 mins or so, remove the tin foil and let it bake for another 15 mins uncovered. The veg will be cooked in the centre and a little crispy on top.

*Adjust cooking time if you add meat. Just start it out covered for ten mins and then cook uncovered until the meat is done.

I've been doing this with my veg for ages and I had a couple of friends try it with their protein of choice to see if it works well for meat. Apparently it's good with chix and prawns.
No added fat or cals. Makes an easy one-pot dish that can be changed depending on the herbs you use.
Another I found via Google. Tried it last night with some cheese grated on top. Was pretty good. Smile

PSMF spinach squares

Ingredients:

- 2 10oz packs of frozen chopped spinach, thawed and drained well (gives you about 550g spinach)
- 1c low fat cottage cheese (I used lite quark, 1c=200g)
- 2 garlic cloves, minced
- 1 tsp of salt (maybe less if your cottage cheese is salted)
- 1/4 tsp black pepper
- 1/8tsp ground nutmeg (optional)
- 1 tsp baking powder
- 1/2 cup egg whites (from 3 large eggs; ~100g)

Preheat oven to 400°F (205°C). Spray a non-stick 8x8 baking pan with PAM (oil spray).

In a large bowl, mix together the spinach, cottage cheese, garlic, seasonings, baking powder. If you like a finer texture, use a food processor or blender.

In a separate bowl, whip the eqq whites until soft peaks form.

With a spatula, gently fold the whipped egg white into the spinach mix.

Dump into the prepared pan and bake 20-30 minutes, depending on how dry you like it. I baked for 25 min, and it was still a bit moist--next time I'll go longer.

Makes 4 big portions. The actual macros will depend on your cottage cheese (mine was 190 cals, 28gP, 7gC, 6gF per 200g), but to give you an idea, mine are:

Per square (4 total)-- 93 cals, 14gP, 7gC, 1.8gF, 3.5g fiber
Sportsgirl's Jelly Fluff (aka mousse/cheesecake without the crust).

-1 cup cottage cheese (or 1 package ff cream cheese)
-1 bowl premade sf jello (1cup hot water/jello sachet)

Make up jello using half the water only - just use one cup of hot water and put in the fridge to set (forgo the second cup of cold water). Once jello is set, blend in (with a blender) 1 cup of low fat cottage cheese until smooth. Again, place in fridge to set. Enjoy.

They both are. Big Grin I know of figure girls who have jelly fluff/mousse as half of their meals during prep! lol.
I'm not doing psmf either but eat this stuff on a regular basis. Made the cauliflower pizza crust (linked above) yesterday. It's so good and much easier than trying to make real pizza dough Tongue

I made the jelly fluff stuff last night! Okay, it's totally not PSMF-friendly because I had only regular Jello around the house...but it's great and is perfect for a sweet snack that has some good protein. Will try the sugar-free version next time. Thanks for the recipe!
For a yummy treat, add mini marshmallows to the jelly fluff and stir in. Nom nom. Definitely not PSMF friendly but taste bud friendly!! Tongue
So, I have been doing a little PSMF this week, and becuase its boring as shit, I try to make up some itneresting foods.

So far

Chicken and Leek soup
Cook chicken+onion in a really tiny amount of oil, add chicken stock+a vege stock, one carrot and a ton of leeks. Cook and eat.

Thai green curry soup
Its not the same without coconut milk but Sad
I cook some shallots in a dash of oil, and add some corriander, lemon grass and a small blob of green curry paste. Let cook off, then add stock (chicken+herb stock works nice), cooked chicken slices and some frozen asian vege mix. Cook and eat.

Something indian
I marinate some chicken tenders in lemon juice, paprika, garlic and ginger for 20minutes, then add a little greek yoghurt (enouhg to coat chicken) and some tandoori powder. I marinate that all day, then when I got home, cooked the bastard up in the oven. Served it up with a ton of diced cucumber which has been mixed in a dash of yoghurt, some lemon juice, mint and garlic.
